Bubbie's

Passing the intersection of Routes 9G and 199 you may have noticed people lining up in front of a tiny air-stream-like trailer set back from the road. It's Bubbie's Vegetarian Burrito Stand and it's one of the best places to eat in Red Hook.
Bjanette Andersen (Bubbie) and Rodrigo Sautto met in San Miguel Allende. Bubbie is from Tivoli. They wanted to find interesting work and be their own bosses so they bought the trailer in a backyard in New Paltz, modified it themselves to conform to the health codes and opened for business last summer.
They serve 70 to 80 burritos a daytheir record is 160rice and beans with lettuce, tomato, cilantro, sour cream and salsa or guacamole; and quesadillasmelted cheese on a tortilla served with sour cream and salsa. They roast serranos and jalapeños and red chipotle peppers which are made into fiery relishes. They also serve palate cooling aguas de frutasmildly sweet fruit punch.
The dining room is a weather beaten picnic table under the trees and one of the best things about eating there is the conviviality of the other guests: Bard students, museum and music festival workers, young kids, tourists, summer people, construction guysvarious local people of all sorts. Bubbie's will stay open while the warm weather lasts.
